I thought I would start off this log with one of my new favorite dishes-Spaghetti Salad! Ok don't laugh until you try it the first time. I am diabetic so I need to watch what I eat. In fact I currently weigh in at 193.5 lbs That is 88.8 Kilos my for European friends. I want to drop this down to about 175 lbs or 79 kilos.
I really enjoy pasta and sauce because has a great taste and is very filling. Pasta and sauce can also be quite fattening. 100 grams or so of pasta is about 400 calories depending on the brand. Pasta sauce itself is relatively harmless at about 100 calories a cup.
One night I really wanted a taco salad and did not have the correct ingredients. I decided I would throw some leftover spaghetti sauce over chopped lettuce. To my surpise it taste absolutely wonderful. The crunch of the lettuce makes a nice departure from pasta. Which is great for me, and for you, because lettuce is only about 50 calories a cup. You can have a HUGE 3 cup portion of Spaghetti salad and end up at only eating 200 calories. Lettuce is also a good source of fiber.
